Methi Kadhi

(Serves 3-4)

Ingredients for Kadhi
1 cup Methi (fenugreek leaves)
1 cup Curd
1 lemon juice
2-3 tb spoon besan
Salt to taste
1 tsp red chili powder
1/2 tsp turmeric
1 tsp dry mango powder
1 tsp coriander powder
Ingredients for Tadka
2-3 tbsp mustard oil
1 onion sliced
8-10 garlic cloves chopped
1 tsp sarso
1/4 tsp methi dana (fenugreek seeds)
1/4 tsp sabut dhaniya (coriander seeds)
1/2 tsp hing (asafetida)
2-3 red chilli whole
9-10 curry leave
Salt to taste
1/2 tsp red chili powder
1/2 tsp dry mango powder
1/2 tsp coriander powder
PROCEDURE
For Kadhi
Take a mixing bowl.
Add curd and besan.
Add 1 cup of water.
Add spices and whisk well the ingredients, so that no lumps are to be found.
Take pan, heat oil and add fenugreek leaves and let it cook well for 5-7 mins on medium low flame.
Add kadhi batter and 1 cup of water cook well for 15-20 mins on low medium flame.
Add 1 cup of water, as kadhi batter will get thick and cook on low flame.
Let it cook on low flame for further 10-15 mins.
If required, after adding Tadka, add lemon juice and give it a nice mix.
For Tadka
Take a pan and heat oil.
Add mustard seeds,fenugreek seeds, coriander seeds, curry leaves, red chilies, sauté well for 3-4 mins.
Add garlic and give it a nice mix.
Cook well for 5-7 mins.
Add onions and cook it well till it changes color.
Add all the spices and toss well for a min or two.
Add tadka in the kadhi. Simmer the flame in low flame for 15-20 mins.
For Serving
Serve hot with Rice.. Enjoy!!
