Baingan Aloo

(Serves 2)


Ingredients


  1. Half brinjal sliced

  2. 2 potatoes peeled and sliced

  3. Salt to taste

  4. 1/2 tsp red chili powder

  5. 1 tsp dry mango powder

  6. 1 tsp coriander powder

  7. 2 tbsp mustard oil

Procedure




  1. Heat oil in a kadai and add potatoes.

  2. Stir fry potatoes for 10 mins on medium flame.

  3. Add baingan and stir fry for 10-15 mins.

  4. Add spices and mix well.


For Serving

Garnish it with kasuri methi and Serve hot baingan aloo with curd and roti
