Baingan Aloo (Gravy)

Ingredients


  1. Half brinjal (sliced)

  2. 2 small potatoes (peeled and sliced)

  3. 1 tsp ginger garlic paste

  4. 1-2 green chilies finely chopped

  5. 1 onion finely chopped

  6. 2 tomatoes finely chopped

  7. Salt as per taste

  8. 1 tsp red chili powder

  9. 1 tsp dry mango powder

  10. 1 tsp coriander powder

  11. 1 tsp oil

  12. 1/2 cup water


Procedure

  1. Heat oil in pressure cooker.

  2. Add ginger garlic paste and cook for a min.

  3. Add green chilies and onions and cook till it changes colour.

  4. Add tomatoes and cook for 5-7 mins.

  5. Add spices and mix well.

  6. Add potatoes and cook for 7-8 more mins.

  7. Add sliced brinjal and stir for 2-3 mins.

  8. Add water and mix well.

  9. Cover it with lid.

  10. Switch off the flame after 1-2 whistle/s.

  11. You can dry up the gravy if you want (optional)



For Serving

Garnish it with fresh coriander and serve hot with rice and enjoy
