Bharwan Baingan

Serves 2



Ingredients


  1. 500 gms baingan sliced

  2. 7-8 small size onion sliced

  3. 2 tsp salt

  4. 2 tsp red chili powder

  5. 2 tsp dry mango powder

  6. 2 tsp coriander powder

  7. 2 tbsp mustard oil


Procedure




  1. Wash onions and brinjal and cut it in X .

  2. Take a bowl and mix spices .

  3. Fill onion and brinjal with mix spices.

  4. Heat oil in kadai.

  5. Add brinjal and cook on low flame for 15-20 mins and cover it.

  6. Add onions and mix well.

  7. Add left over mixed spices and sprinkle it on the veggies .

  8. Cover it for 15 mins or till the veggies are cooked.

  9. In between keep stiring.


For Serving

Serve hot bharwan baingan with curd and chapati and enjoy!!
