Chickpea Quinoa Salad

(Serves 4-5)







Ingredients



  1. 1 cup boiled Chickpeas

  2. 1 small bowl boiled Quinoa

  3. 1 cucumber cut in cubes

  4. 1 big tomato chopped

  5. 1 big onion chopped in cubes

  6. Handful of roasted Pistachios

  7. 50 gms Feta cheese Crumpled

  8. 1.5 Lemon

  9. Salt as per taste

  10. 1-2 tsp Black pepper

  11. 1/4 cup Olive Oil

  1. Take a big mixing bowl.

  2. Add boiled chickpeas and quinoa.

  3. Add veggies, pistachios, feta cheese.

  4. Squeeze lemon, add salt and black pepper.

  5. Add olive oil and give it a nice mix.




For Serving


Let it rest for an hour or two in the fridge and your Salad is good to go..
