Chickpea Quinoa Salad

(Serves 4-5)

Ingredients
1 cup boiled Chickpeas
1 small bowl boiled Quinoa
1 cucumber cut in cubes
1 big tomato chopped
1 big onion chopped in cubes
Handful of roasted Pistachios
50 gms Feta cheese Crumpled
1.5 Lemon
Salt as per taste
1-2 tsp Black pepper
1/4 cup Olive Oil
Procedure

Take a big mixing bowl.
Add boiled chickpeas and quinoa.
Add veggies, pistachios, feta cheese.
Squeeze lemon, add salt and black pepper.
Add olive oil and give it a nice mix.
For Serving
Let it rest for an hour or two in the fridge and your Salad is good to go..
