Dahi Baingan

Serves 2




Ingredients


  1. 1 Eggplant roundly cut

  2. 1 cup whisk curd

  3. Salt as per taste

  4. 1/2 +1/2 tsp red chili powder

  5. 1/2 + 1/2 tsp coriander powder

  6. 1/2 +1/4 tsp turmeric powder

  7. 1 tbsp + 2 tbsp mustard oil


Procedure




  1. Take a plate. Add your 1/2 tsp spices,

  2. Add 1 tbsp mustard oil, give it a nice mix,

  3. Add in your eggplant and coat it well in spices.

  4. Let it rest for 15-20 mins.

  5. Take your whisked curd and add rest of the spices.

  6. Give it a nice mix and keep it aside.

  7. Heat oil in a pan.

  8. Add your coated eggplant and nicely stir fry it on low medium flame for 15-20 mins.

  9. On low flame, add curd and give it a nice mix.

  10. Cover it with a lid and cook it well on low flame for 10-15mins.


For Serving
