Dahi Baingan

Serves 2

Ingredients
1 Eggplant roundly cut
1 cup whisk curd
Salt as per taste
1/2 +1/2 tsp red chili powder
1/2 + 1/2 tsp coriander powder
1/2 +1/4 tsp turmeric powder
1 tbsp + 2 tbsp mustard oil
Procedure
Take a plate. Add your 1/2 tsp spices,
Add 1 tbsp mustard oil, give it a nice mix,
Add in your eggplant and coat it well in spices.
Let it rest for 15-20 mins.
Take your whisked curd and add rest of the spices.
Give it a nice mix and keep it aside.
Heat oil in a pan.
Add your coated eggplant and nicely stir fry it on low medium flame for 15-20 mins.
On low flame, add curd and give it a nice mix.
Cover it with a lid and cook it well on low flame for 10-15mins.
For Serving
