Lemon Launji

Ingredients
500 gms Lemon (washed and chopped)
1 tsp cumin
1 tsp sauf (fennel seeds)
1/2 tsp methi dana (fenugreek seeds)
1 tsp kalonji (nigelle seeds)
7-8 tbsp sugar
Salt as per taste
1 tsp red chili powder
1 tsp turmeric powder
1 tsp coriander powder
1 cup water
2-3 tbsp mustard oil
Procedure
Take a mixing bowl, add lemons along with spices.
Give it a nice mix and let it rest for 15-20 mins.
Heat oil in a pan.
Add cumin, methi dana, kalonji, sauf and allow them to crackle.
Add prepared lemon and give it a nice mix.
Add water and mix well.
Cover it with lid, cook 12-15 mins on low medium flame.
Keep stiring in between, till lemons texture softens.
Add sugar, give it a nice mix.
Let it cook further for 8-10 mins on medium flame.
For Serving
Serve cold launji with lunch/ dinner and beat the summer heat.
