Lemon Launji



Ingredients


  1. 500 gms Lemon (washed and chopped)

  2. 1 tsp cumin

  3. 1 tsp sauf (fennel seeds)

  4. 1/2 tsp methi dana (fenugreek seeds)

  5. 1 tsp kalonji (nigelle seeds)

  6. 7-8 tbsp sugar

  7. Salt as per taste

  8. 1 tsp red chili powder

  9. 1 tsp turmeric powder

  10. 1 tsp coriander powder

  11. 1 cup water

  12. 2-3 tbsp mustard oil


Procedure




  1. Take a mixing bowl, add lemons along with spices.

  2. Give it a nice mix and let it rest for 15-20 mins.

  3. Heat oil in a pan.

  4. Add cumin, methi dana, kalonji, sauf and allow them to crackle.

  5. Add prepared lemon and give it a nice mix.

  6. Add water and mix well.

  7. Cover it with lid, cook 12-15 mins on low medium flame.

  8. Keep stiring in between, till lemons texture softens.

  9. Add sugar, give it a nice mix.

  10. Let it cook further for 8-10 mins on medium flame.




For Serving


Serve cold launji with lunch/ dinner and beat the summer heat.
