One Pot Sambar Rice

(Serves 2)

Ingredients
1 Portion Rice (washed and soaked for 30 mins)
2 Portion Arhar Dal / Pigeon Pea (washed and soaked for 30 mins)
2 cups water
1 onion slices
2 tomatoes chopped
1-2 green chilies chopped
1 tbsp mustard seeds
8-10 curry leaves
2-3 Red Chili
1 tbsp grated ginger
Salt to taste
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1/2 tsp coriander seeds
2-3 tbsp mustard oil
1/2 tsp hing/ asafetida
1 tsp dry mango powder
2 tbsp Sambar Masala
Procedure
Heat oil in a pressure cooker.
Add mustard seeds, curry leaves, coriander seeds, red chili.
Let it crackle for a min or two.
Add grated ginger and cook for a min or two.
Add onions and green chilies and mix well.
Cook it till it changes color, for 6-7 mins on low medium flame
Add chopped tomatoes, mix well.
Cook till it turns soft and mushy.
Add spieces and give it a nice mix.
Add Dal and Rice, mix it well.
Add water and mix.
Cover it with a lid, give a whistle and simmer the flame for 5 mins.
For Serving
